The Coquito
For two 8 oz glasses
1 1/3 cup evaporated milk
¼ cup cream of coconut
¼ cup coconut milk
1/8 cup sweetened condensed milk
1/8 teaspoon cinnamon
¼ teaspoon allspice
¼ teaspoon nutmeg
3 oz cognac
Mele Kalikimaka is a thing to say on a bright and sunny Hawaiian Christmas day! If you want to
spend your holidays imagining white sands, green palms, and azure waters, then this Puerto
Rican classic is for you! “Puerto Rican eggnog” substitutes cream of coconut for eggs as a way
to bind the sweet and spicy island flavors of cinnamon and coconut milk into a blended cup of
your own little piece of paradise. No Caribbean treat is complete without abuela’s secret
ingredient: condensed milk. Traditionally, this drink is made with the elixir that makes the
islands run, rum, but we are going to bring in a pan-Caribbean flair by introducing a French
twist using cognac.
Making this one is super simple! Start by putting everything into a blender, then blend it for 1-2
minutes until everything is smooth and well-mixed. Pour the mixture into a pint jar and seal it,
then place it in the fridge to chill. If you’d like to serve it immediately, just shake with ice and
pour! Garnish with candied fruit such as oranges, strawberries, or pineapples. For some fun
Christmas flair, we chose to garnish with a miniature candy cane for a tasty way to keep
everything mixed up as we enjoy.
