Pumpkin Spice Cookies

Some start the fall season with pumpkin spice drinks and candles, but we like to start our holiday with Pumpkin Spice Cookies.

The Ingredients | “Les Ingrédients”

2 1/2 Cups all-purpose flour 300 g

1 teaspoon baking soda

1 teaspoon baking powder

2 teaspoons cinnamon

1 teaspoon pumpkin pie spice

Half a teaspoon of salt

1 Cup or 240g Libby’s 100% Pure Pumpkin 

½ Cup or 113g  of softened butter  

½ Cup or 100g granulated sugar

1 Cup or 220g packed Brown Sugar

1 Large Room Temperature Egg

1 tsp Vanilla Extract

The Steps| L’étape

Step 1: To a mixing bowl, combine 2 ½ cups all-purpose flour, 1 tsp baking soda, 1 tsp baking powder,  2 tsp cinnamon, 1 tsp pumpkin pie spice, and ½ tsp salt. Place your flour mixture and spice mixture to the side and grab your hand or stand mixer.

Step 2: In your hand or stand mixer, add ½  cup softened butter, ½  cup or 100 g of granulated sugar, 1 cup of packed light brown sugar,1 large room temperature egg, a teaspoon of vanilla extract, and Mix on medium speed for 2 to 3 minutes 

Step 3: Then add one cup of pumpkin purée or 240 g to the mixer. Mix on low speed until well combined

Step 4: Gradually add your flour mixture on low speed until all the flour is added. Stop mixing at this point, as the duration of the mixing will be done by hand to prevent overmixing. Once gently and well combined, cover and refrigerate for up to an hour to firm the batter for cutting. At 40 minutes, preheat the oven to 350 degrees Fahrenheit. 

Step 5: Remove the batter from the fridge and, with a cookie scoop or by taking 2 tablespoons of batter to dampen your hand, gently roll the batter into a ball and place on a parchment-lined baking sheet.

Step 6: Place the baking sheet into the oven for a delightful 10-12 minutes, depending on the stove. Remove from heat and allow to completely cool to prevent the melting of the icing.

Step 7: The Topping 

 The Ingredients | “Les Ingrédients”

2 cups of powdered sugar or 240 g

A pinch of salt

2 tablespoons of melted and cooled butter

⅛  teaspoon ginger

⅛  teaspoon cinnamon

1 teaspoon of vanilla extract for flavor

¼  cup or 60ML  cold milk, or as much as needed for  the desired consistency of the glaze 

To enrich the color and taste, ½ teaspoon of cinnamon

The Steps| L’étape

Step 1: To a Mixing Bowl, add all the ingredients and blend to the desired consistency. Then drizzle, dip, or dollop the icing to your liking on the most amazing pumpkin-spiced cookies. And thoroughly Enjoy!
