Not Grand-Mere’s Biscuits
Whether it was the spring mornings of the 1970’s or the blizzard 1993, the one constant was Biscuits de grand-mère” or Grandmere’s Biscuits!
The Ingredients | “Les Ingrédients”
3 Cups Baking Flour
2 Tbs Baking Powder
1 Tsp of Baking Soda
3 Sticks Cold Butter
½ Tsp Salt
2 Eggs
1 ½ Cup Whole Butter Milk
The Steps| L’étape
Step 1: In a large bowl, add your dry ingredients. 3 Cups Baking Flour, 2 Tbs Baking Powder, 1 Tsp of Baking Soda, ½ Tsp Salt, and whisk until mixed well.
Step 2: Grate your 3 Sticks of Cold Butter onto your dry mixture. It’s Important that the butter is quite cold but not frozen. This makes it easier to grate. Once all the butter has been grated, use a potato masher or your hands to mix the dry ingredients and butter very well.
Step 3: Take 2 Eggs and scramble them before adding them to the flour and butter mixture. Slowly mix and blend the eggs into the flour mixture.
Step 4: Take 1 ½ Cup Whole Butter Milk and slowly add the milk into your mixture. Pour a little, mix a little, pour a little, mix a little until complete.
Step 5: After you have combined all the ingredients beautifully, allow this to sit covered in your refrigerator for 30minutes to an Hour. This allows it to firm so that you are able to easily cut the dough for biscuits.
Step 6: 10 Minutes before you remove the dough, preheat your oven to 400°F.. Take 1 Egg and mix with a little buttermilk and Water to make an egg wash
Step 7: Remove the dough from the refrigerator and flour your baking surface generously. Place your dough onto the surface, also generously flouring the top of the dough. Begin to shape the dough into a square. This may take you flipping the dough a few times, while doing this, you are encouraged you fold the ends into the center, making three tiers. Continue to flour the batter so it isn’t sticky.
Step 8: Once you have a well-floured dough, fold it, make it nice and smooth, press or roll it out to a 1/2 inch thick and 5x10 rectangle. To your best ability… You can’t mess this up!
Step 9: Take a 2 ½ inch Cookie Cutter and begin cutting out your biscuits. Place them on a baking sheet with parchment paper. The biscuit should touch ever so gently to assist them to rise evenly.
PRO TIP: POWDER THE COOKIE CUTTER BETWEEN BISCUITS…THANK ME LATER
Step 10: Place in the Oven for 15-20 Minutes, depending on your oven. Once your biscuits are divinely golden, it’s time to enjoy! Perhaps a biscuit pot-pie is in the future for these beauties, or maybe a sweet and spicy pepper jelly.
